Cook for 7-9 minutes over low heat in a wide shallow pan with just enough water to be absorbed, so the pearls finish glossy rather than washed out. They work as a side with grilled meat and fish, as the base of a warm or cold salad, stirred into soups, or as a vegetable-forward pilaf.
